The Taste of Home and Family
There are flavors that taste of home and family and those long ago growing up days. Days when we ran through the yard playing make believe, not a care in the world. Those days are coming to my mind as I make my Grandma's and my Mom's rice pudding. This simple, sweet desert is just the thing for a homesick girl. Homesick for my Grandma's kitchen table. For Wonder Bread and popcorn balls and the love that creates the perfect family meal. I can still see us all gathered around the table. Food piled high on plates. Homemade pies cooling from the oven. Stories and laughter filling the air.
So, here's to long ago days filled with home, family and love. Here's to my new little family, growing before my eyes. And here's to all the memories my son will have in years to come.
Rice Pudding

1 c Rice - Cook in boiling salted water until tender. Instant rice works as well.
Rinse rice with cold water and drain.
Put rice in pan, cover with milk.
Add 1 c sugar, 1 tsp vanilla.
Stir often. Bring to full boil then cook about 10-15 minutes more - until milk is absorbed.
Pudding will thicken as it cooks.
Sprinkle nutmeg over the top.
Serve hot or cold.
